Our beef is sent to Cheplic’s in September. It will be aged for at least two weeks.
We are transitioning to a pre-order process, with sides to be reserved starting in spring.

To reserve a side of beef, use the form to indicate that you’re ready to send your deposit. We will be in touch to confirm availability.

We have a 30+ year relationship with Cheplic Packing in Finleyville PA to provide top notch processing services to our customers.
Cheplic’s is a clean, inspected, family run facility. They will work directly with you to custom cut your side of beef, to wrap and freeze it, and to coordinate your pick up.

A side of beef will include steaks, roasts, and ground beef. You may also request specialty items like stew meat, soup bones, or liver.
Not all cuts are possible in one side of beef. For example, you will be asked to choose between keeping the tenderloin whole or cutting it into steaks.

You will be asked to provide detailed cutting instructions directly to Cheplic’s. In addition to the options that are listed, you may ask about other cuts, such as soup bones, liver, or skirt steak.
If this is your first time purchasing a side of beef, this site may help you to think about how you’d like it to be cut.

Beef will be deep frozen and double wrapped in protective layers to give the best longevity in your freezer at home.
Unless other accommodations have been made in advance, plan to pick up your beef at Cheplic Packing.

Price includes $xx per pound of hanging/carcass weight, which includes $xx to Flat Stone Lick and $xx to Cheplic’s, plus an additional $xx fee to Cheplic’s.

When you purchase a side of beef from us, you will typically receive 200-250 pounds of packaged, frozen beef per your cutting instructions.
A rule of thumb is to allow 7-10 cubic feet of freezer space for a side of beef.

It is possible to split a side with another customer of your choosing. To do so, you must agree to one set of cutting instructions. You must also agree to divide up the cuts, such as flank steak or brisket, that are one per side.

If you aren’t ready to reserve a side of beef at this time, you can still submit the form to be added to our mailing list for next year.
